Cocoa beans is the seed of cacao tree that are extracted from its fruits called cocoa pods. Cacao tree is a kind of tropical plant called Theobroma cacao which means "food of the gods". According to the International Cocoa Organization, they must be harvested manually by making a clean cut as to prevent making damages to the junction of the stem.
The seeds inside the cocoa pods are very moist and sticky when they are removed from the pods. After fermentation and drying, the seeds turns to red-brown colour and dry. They can be used as ingredient of chocolate, cocoa powder and cocoa butter depends on the roasted temperature, time and degree of moisture involved.
Indonesia is the top five countries producing largest cocoa.
